Avocado Chicken Salad
Ingredients
- 2 cups cooked chicken breast shredded or diced
- 2 ripe avocados diced
- 1 cup cherry tomatoes halved
- 1/2 cup cucumber diced
- 1/4 cup red onion finely chopped
- 1/4 cup fresh cilantro chopped
- 1/4 cup Greek yogurt or mayonnaise
- 2 tbsps lime juice
- 1 clove garlic minced
- Salt and pepper to taste
- Optional: mixed greens or lettuce for serving
Instructions
Dressing:
- In a small bowl, combine the Greek yogurt or mayonnaise, lime juice, minced garlic, salt, and pepper. Mix until well combined.
Prepare the Salad:
- In a large mixing bowl, combine the shredded or diced chicken, diced avocados, cherry tomatoes, cucumber, red onion, and chopped cilantro.
- Pour the dressing over the salad ingredients. Gently toss to combine, making sure everything is evenly coated with the dressing.
Serve:
- Serve the avocado chicken salad on its own or over a bed of mixed greens or lettuce. Enjoy immediately for the freshest flavors.
