Balsamic Glazed Salmon with Asparagus

Ingredients
- 4 salmon fillets
- 1 bunch of asparagus trimmed
- 1/4 cup balsamic vinegar
- 2 tbsp honey
- 2 cloves garlic minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh chopped parsley for garnish
Instructions
Prepare Balsamic Glaze
- In a small saucepan, combine the balsamic vinegar, honey, minced garlic, salt, and pepper. Bring the mixture to a simmer over medium heat and cook for 5-7 minutes, or until it has thickened slightly. Remove from heat and set aside.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
Prepare Salmon and Asparagus
- Place the salmon fillets on one half of the prepared baking sheet, leaving space for the asparagus. Season the salmon with salt and pepper to taste.
- Arrange the trimmed asparagus spears on the other half of the baking sheet. Drizzle with olive oil and season with salt and pepper.
- Brush the balsamic glaze generously over each salmon fillet, coating the top and sides. Reserve some glaze for serving.
- Transfer the baking sheet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender but still crisp.
- Remove the baking sheet from the oven and transfer the salmon and asparagus to serving plates. Drizzle with the remaining balsamic glaze and garnish with fresh chopped parsley.
- Serve alongside cooked quinoa, rice, or roasted potatoes for a complete and satisfying meal.
