Grilled Salmon Skewers with Creamy Dill Yogurt Sauce

Ingredients
  

For the Salmon Skewers:

  • 1 1/2 pounds salmon fillets cut into 1-inch cubes
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tsp dried dill
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 red bell pepper cut into 1-inch pieces
  • 1 yellow bell pepper cut into 1-inch pieces
  • 1 red onion cut into wedges
  • Skewers if using wooden skewers, soak in water for 30 minutes
  • For the Creamy Dill Yogurt Sauce:

For the Creamy Dill Yogurt Sauce:

  • 1 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill chopped
  • 1 clove garlic minced
  • Salt and black pepper to taste

Instructions
 

Marinate the Salmon

  • In a large bowl, combine olive oil, lemon juice, minced garlic, dried dill, salt, and black pepper.
  • Add the salmon cubes to the bowl and toss to coat evenly. Marinate for at least 15 minutes.
  • Prepare the Creamy Dill Yogurt Sauce:
  • In a small bowl, mix the Greek yogurt, lemon juice, chopped fresh dill, minced garlic, salt, and black pepper until well combined. Set aside.

Assemble the Skewers

  • Preheat the grill to medium-high heat.
  • Thread the marinated salmon cubes, red bell pepper pieces, yellow bell pepper pieces, and red onion wedges onto the skewers, alternating between the ingredients.

Grill the Skewers

  • Lightly oil the grill grates to prevent sticking.
  • Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the salmon is cooked through and the vegetables are tender.

Serve

  • Transfer the grilled salmon skewers to a serving platter.
  • Serve with the creamy dill yogurt sauce on the side for dipping or drizzling.
