No Fuss Salmon Cakes

Ingredients
  

  • 15 oz wild Alaskan Salmon pink or red
  • 1 egg
  • 1 cup cooked mashed sweet potatoes
  • cup shredded zucchini optional
  • ½ cup almond flour
  • A few tablespoons of herbs and scallions
  • Salt and pepper
  • Oil for cooking

Instructions
 

  • Whisk together the egg and sweet potato.
  • Add the almond flour and mix to combine.
  • Add the salmon, zucchini and herbs of your choosing (any combination
  • of parsley, dill, scallions and chives would work) and mix gently until
  • everything is well combined.
  • Preheat a nonstick or cast iron pan and coat with coconut or olive oil
  • Form the patties straight from the bowl and into the pan.
  • Cook each side for a few minutes, until they are lightly browned and
  • cooked through.
  • Serve over salad of mixed greens - feel free to add some grilled veggies too!
