No Fuss Salmon Cakes
Ingredients
- 15 oz wild Alaskan Salmon pink or red
- 1 egg
- 1 cup cooked mashed sweet potatoes
- ⅓ cup shredded zucchini optional
- ½ cup almond flour
- A few tablespoons of herbs and scallions
- Salt and pepper
- Oil for cooking
Instructions
- Whisk together the egg and sweet potato.
- Add the almond flour and mix to combine.
- Add the salmon, zucchini and herbs of your choosing (any combination
- of parsley, dill, scallions and chives would work) and mix gently until
- everything is well combined.
- Preheat a nonstick or cast iron pan and coat with coconut or olive oil
- Form the patties straight from the bowl and into the pan.
- Cook each side for a few minutes, until they are lightly browned and
- cooked through.
- Serve over salad of mixed greens - feel free to add some grilled veggies too!
