Gluten Free Banana Bread
Ingredients
- 1 cup ripe mashed banana about 3 medium 2 eggs
- 1/4 cup unsweetened nut milk
- 3/4 cup coconut sugar or 1/2 cup Monk Fruit baking sweetener
- 1/3 cup coconut oil melted (or 1/3 cup unsweetened apple sauce)
- 1-1/2 cups oat flour 180g
- 2 tbsp coconut flour 15g
- 1-1/2 tbsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 2/3 cup Enjoy Life chocolate chips
- 30 g chopped walnuts
Instructions
- Preheat oven to 350 degrees F and grease a 8x5 baking dish and line it with a parchment paper sling.
- Mash bananas well in a large bowl, making sure to only use 1 cup of it.
- Add in eggs, milk, sugar, and coconut oil (or apple sauce) and whisk until fully combined
- Add in oat flour, coconut flour, baking soda, baking powder, salt and cinnamon and mix with a spatula until smooth.
- Fold in chocolate chips and walnuts.
- Transfer batter to the prepared baking dish and smooth over the top.
- Bake in the middle rack for 50 to 60 minutes, or until a toothpick inserted comes out clean and the bread gently springs back when touched. Check after 40 minutes.
- Let the bread fully cool before slicing into it.
