Mediterranean Meatloaf
Ingredients
For the Meatloaf
- 2 tsp olive oil
- 1/2 cup diced red onion
- 1 tsp grated or minced garlic
- 1/2 cup diced roasted red peppers
- 1/3 cup crumbled feta
- 1/4 cup chopped kalamata olives
- 1 tbsp fresh chopped dill
- 2 tbsp chopped flat leaf parsley
- 2 tsp dried oregano
- Salt & pepper to taste
- 1 egg
- 1/4 cup gluten free of panko break crumbs
- 1 tbsp milk or nut milk
- 1 lb lean ground turkey
For the Tzatziki Sauce
- 1 cup plain non-fat Greek yogurt
- 1/2 cup grated English or Persian cucumber squeeze out excess moisture with your hands or a towel
- 2 tbsp lemon juice
- 1 tbsp dill
- 1/4 tsp garlic powder
- Kosher salt and fresh ground black pepper to taste
Instructions
- Pre-heat the oven to 400° F. In a non-stick skillet over medium heat, sauté the onion in the olive oil until it starts to soften, about 2 minutes. Add in the garlic and sauté another 30 seconds. Dump the mixture into a large mixing bowl.
- Add the peppers, feta, olives, dill, parsley, oregano, egg, panko, milk, salt and pepper to the mixing bowl and whisk everything together. Add in the turkey and use your hand to combine the mixture being careful not to over-mix.
- Line a baking sheet with parchment paper or foil (spray the foil with cooking spray) and form the meat mixture into a loaf that is equally thick all the way around.
- Bake for 30-40 minutes or until a meat thermometer inserted into the middle reads 170° F. Let the meatloaf rest for 5-10 minutes before serving.
- In a medium sized bowl stir together all the ingredients for the tzatziki sauce. Taste for seasoning and serve with the meatloaf.
