Peanut Butter Protein Bars
Ingredients
- 1/4 cup maple syrup to reduce sugar, use 2 tbsp maple syrup
- 1 cup creamy or crunchy peanut butter natural with oil I use Santa Cruz brand
- 1 tsp vanilla extract
- 60 grams vanilla or chocolate protein powder
- 1/2 cup oat flour
- 1/4 cup mini dark chocolate chips
- 2 tbsp raw cacao nibs for extra crunch optional
- 1/4 tsp flaky sea salt for topping optional
Instructions
- In a bowl or a stand mixer add all of the ingredients except chocolate chips. Mix by hand or with a mixer until a dough forms. The texture will be like a dense cookie dough.
- Fold in chocolate chips and cacao nibs if using.
- Press the mixture into an 8x4 pan lined with parchment paper.
- Freeze for 1 hour so the bars can set. Cut into 8 even slices or smaller to make more servings.
- Sprinkle with sea salt (optional).
Notes
Gluten-Free: To make gluten-free make sure you use certified gluten-free oats.
Peanut Butter: Do not use regular peanut butter such as Jiff/Skippy. This needs to be a natural peanut butter with natural oils. I use Santa Cruz brand
Protein Powder: For best results, measure your protein powder with a scale. Different proteins will create different flavor profiles, nutrition info, and texture. Feel free to ask for the brand that I use!
Oat Flour: I grind my own and use Sprouted Oats from One Degree
Mini Chocolate Chips: Feel free to omit mini chocolate chips, or add more. I use Enjoy Brand mini chips.
