Chocolate Peanut Butter Balls
These delicious Peanut Butter Balls are great to take to a holiday party, or keep on hand for healthy family treats!
Ingredients
- 1 Jar Organic Peanut butter I use Santa Cruz brand No Stir Crunchy
- 3 cups Rice Crisp Cereal
- 5 Tbsp Swerve confectioners
- 1 Tsp Sea Salt
- 2 Bags Enjoy Life or Lilly’s Chocolate chips semi-sweet
Instructions
- Put the rice crisps on a bowl, and then spread the peanut butter on top.
- Sprinkle the swerve and salt on the top evenly and then mix all together.
- Place bowl in freezer to harden slightly (it makes it easier to make the balls).
- Use a spoon to potion small amounts for balls and rolls between hands to create shape/size.
- Place the balls on parchment paper on a cookie sheet and then return to freezer to harden.
- In double boiler melt the chocolate chips. Remove balls from freezer and using two spoons to move balls from one the next, coating the balls with chocolate.
- Optional: Add a little dusting of the swerve confections sugar to make them pretty!
- Return to freezer to set for about 10 minutes.
- Move them to an airtight container and keep in fridge.
