Balsamic Glazed Salmon with Asparagus

Ingredients
  

  • 4 salmon fillets
  • 1 bunch of asparagus trimmed
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh chopped parsley for garnish

Instructions
 

Prepare Balsamic Glaze

  • In a small saucepan, combine the balsamic vinegar, honey, minced garlic, salt, and pepper. Bring the mixture to a simmer over medium heat and cook for 5-7 minutes, or until it has thickened slightly. Remove from heat and set aside.
  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.

Prepare Salmon and Asparagus

  • Place the salmon fillets on one half of the prepared baking sheet, leaving space for the asparagus. Season the salmon with salt and pepper to taste.
  • Arrange the trimmed asparagus spears on the other half of the baking sheet. Drizzle with olive oil and season with salt and pepper.
  • Brush the balsamic glaze generously over each salmon fillet, coating the top and sides. Reserve some glaze for serving.
  • Transfer the baking sheet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender but still crisp.
  • Remove the baking sheet from the oven and transfer the salmon and asparagus to serving plates. Drizzle with the remaining balsamic glaze and garnish with fresh chopped parsley.
  • Serve alongside cooked quinoa, rice, or roasted potatoes for a complete and satisfying meal.

Optional way to Serve - Honey Garlic Glazed Salmon with Roasted Vegetables:
  • Replace the balsamic glaze with a honey garlic sauce made from honey, soy sauce, minced garlic, and a splash of lemon juice. Serve the salmon alongside roasted vegetables such as carrots, bell peppers, and Brussels sprouts for a hearty and flavorful meal.
