Grilled Salmon Skewers with Creamy Dill Yogurt Sauce
Ingredients
For the Salmon Skewers:
- 1 1/2 pounds salmon fillets cut into 1-inch cubes
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves garlic minced
- 1 tsp dried dill
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 red bell pepper cut into 1-inch pieces
- 1 yellow bell pepper cut into 1-inch pieces
- 1 red onion cut into wedges
- Skewers if using wooden skewers, soak in water for 30 minutes

- 1 cup Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp fresh dill chopped
- 1 clove garlic minced
- Salt and black pepper to taste
Instructions
Marinate the Salmon
- In a large bowl, combine olive oil, lemon juice, minced garlic, dried dill, salt, and black pepper.
- Add the salmon cubes to the bowl and toss to coat evenly. Marinate for at least 15 minutes.
- Prepare the Creamy Dill Yogurt Sauce:
- In a small bowl, mix the Greek yogurt, lemon juice, chopped fresh dill, minced garlic, salt, and black pepper until well combined. Set aside.
Assemble the Skewers
- Preheat the grill to medium-high heat.
- Thread the marinated salmon cubes, red bell pepper pieces, yellow bell pepper pieces, and red onion wedges onto the skewers, alternating between the ingredients.
Grill the Skewers
- Lightly oil the grill grates to prevent sticking.
- Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the salmon is cooked through and the vegetables are tender.
Serve
- Transfer the grilled salmon skewers to a serving platter.
- Serve with the creamy dill yogurt sauce on the side for dipping or drizzling.
